Saint-Véran
En Terre Noire
AOP Saint-Véran En Terre Noire
A historic plot with humus-rich soil
Grown on black soil over limestone subsoil at the foot of the Roche de Vergisson, this single-vineyard cuvée offers remarkable balance. A delicious Chardonnay with notes of ripe apricot and fresh hazelnut, patiently aged for 15 months.
TERROIR
2022 vintage
A 2.01-hectare plot of Chardonnay, planted in 1985, located in the center of the commune of Davayé, extending from La Roche de Vergisson (8,000 vines per hectare). Its name evokes the color of the humus-rich soil, while the subsoil is limestone. Facing southeast, on a gently sloping, well-ventilated hillside, it receives plenty of sunshine. Early ripening, it is often the first plot to be harvested.
At the level of
wine-making
The grapes are harvested by hand and loaded by gravity into pneumatic presses. We use long pressing cycles to preserve the aromatic finesse. The musts are cold clarified and placed in barrels for fermentation. The 15-month aging process includes 10 months in barrels that have held 2 to 4 wines, followed by 5 months in vats. We do not use SO2 during fermentation, but we do use it during the aging phase to ensure the wine’s stability.
100% CHARDONNAY
For the
Tasting
The color is clear and bright yellow. This is a particularly balanced and delicious cuvée. The nose opens with fruity notes. On the palate, the smoothness and juiciness of perfectly ripe apricots come through, accompanied by crunchy notes of fresh hazelnuts.
