TERROIR

2024 vintage

The Longsault is a small stream that runs through the estate. Saint-Véran “Rives de Longsault” reflects the terroir of our village of Davayé, which benefits from its hilly terrain with clay-limestone soils and its relatively warm climate. This cuvée is a blend of several plots with clay-limestone soils: Maillettes, Roncevaux, Péguins, Personnets, and Jonchet.

At the level of

wine-making

After harvesting, the grapes are loaded by gravity into pneumatic presses. Pressing is slow and lengthy in order to gently extract the juice and thus preserve the aromatic finesse. The musts are then cooled and decanted. Vinification takes place in temperature-controlled stainless steel vats (20%) and in wooden barrels (80%). Depending on the vintage, malolactic fermentation may or may not be desired. The wine is aged on fine lees until spring. From harvest to bottling, we limit the use of additives such as SO2 as much as possible.

100% CHARDONNAY

For the

Tasting

Underneath a bright juice, the aromas of fruit jam (apricot, peach, nectarine, plum) resonate. Its broad and muscular attack on the palate offers generous, fleshy fruit before stretching out into a long, fine, lively, and refreshing finish. Open it now and enjoy it for a long time to come.
