This 0.27-hectare plot, planted in 1959 (10,000 vines/ha), is located in the commune of Vergisson. It faces east-southeast at an altitude of 385 meters and benefits from shallow, calcareous soil.
The hand-harvested grapes are gravity-fed into pneumatic presses, and we use long pressing cycles to preserve aromatic finesse. The must is cold-stabilized, then decanted and transferred to barrels for fermentation. The 19-month aging process includes 10 months in barrels that have held three wines, followed by 9 months in tanks. We do not use SO2 on the grapes themselves; we only use it during the aging process to ensure the wine’s stability.
100% CHARDONNAY
A nose of citrus (lime zest), the palate opens with aromas of white peaches, lemony notes, and a fleshy structure. The finish is lively with flinty notes.
